A utility knife is a complementary tool in every culinary enthusiast's collection. Its appearance resembles a chef's knife. Its length does not exceed 150 mm, and its application is highly versatile. The narrow blade allows for free maneuvering of the knife when trimming, peeling, or slicing small-sized products. A utility knife handles meat, fish, and vegetables perfectly. Often, instead of reaching for a large chef's knife, we opt for a utility-type blade to conveniently slice a tomato, an egg, or a piece of cheese. Due to its dimensions, it won't chop cabbage or split a pumpkin, but it will perfectly handle other products you typically choose to prepare, for example, a sandwich. The utility knife, along with the chef's knife, is the most frequently chosen blade.
Characteristic Features.
The Kanetsugu SAIUN knife series features a balanced yet eye-catching design. The Damascus pattern blade, composed of 32 layers of steel forged onto a VG-10 alloy core, is something Japanese knife enthusiasts appreciate. Furthermore, the blade is hardened to 61 HRC using a special „sub-zero-treatment" method, which involves very rapid cooling of the blade to -70 degrees Celsius during thermal processing. As a result, SAIUN series blades have greater cutting aggressiveness and retain their sharpness longer.
A rare knife finishing method used in the SAIUN series is Hamaguri, or the so-called „clam edge." This is a convex profile of the blade, giving it the shape of a seashell. This complex treatment is applied, among other things, to samurai swords and is intended to strengthen kitchen knife blades, reduce their brittleness, adapt them to Japanese cutting techniques, and minimize food sticking to the blade.
The wonderful black micarta handle is adorned with two rivets and an impressive red ring. Crafted in a Western style, hand-polished, it offers an excellent and ergonomic grip, ensuring superb blade control during cutting. Moreover, micarta is an antibacterial, moisture-resistant, and easy-to-maintain material. The metal ring completes the design and helps prevent cut products from sticking, as well as facilitating knife washing.
