A utility knife is an essential addition to any culinary enthusiast's collection. Its appearance resembles that of a chef's knife. Its length does not exceed 150 mm, and its application is highly versatile. The narrow blade allows for free maneuvering of the knife when cutting, peeling, or dicing small-sized products. The utility knife is perfectly suited for cutting meat, fish, or vegetables. Often, instead of reaching for a large chef's knife, we grab a utility knife to slice a tomato, an egg, or a piece of cheese. Due to its dimensions, it won't be suitable for chopping cabbage or slicing a pumpkin, but it handles all other products needed, for example, when preparing a sandwich, perfectly. The utility knife, along with the chef's knife, is the most frequently chosen knife.

Characteristic Features.

The „SAIUN" knife series from the Kanetsugu brand is characterized by a calmer, yet gleaming design aesthetic. The „Damascus" pattern on the blade, composed of 32 layers of „VG-10" alloy steel, is beloved by Japanese knife enthusiasts. Furthermore, the blade is hardened to 61 HRC using a special „sub-zero-treatment" thermal processing technology, where the blade is very rapidly cooled to -70 degrees Celsius. As a result, the blades of the „SAIUN" series knives possess greater cutting power and retain their sharpness longer.

A rare knife finishing method used in the „SAIUN" series is „Hamaguri," also known as the „clam edge." This is a convex blade profile shape, resembling the form of seashells. This sophisticated treatment is applied, among other things, to samurai swords and is designed to strengthen kitchen knives, reduce their brittleness, adapt them to Japanese cutting methods, and minimize food sticking to the blade.

The excellent black „micarta" handle is adorned with two rivets and a striking red ring. Designed in a Western style and hand-polished, it ensures an excellent and ergonomic grip, providing superb control when cutting with the blade. Additionally, micarta is an „antibacterial" material, resistant to moisture, and easy to clean. The crowning metal ring prevents food residues from sticking and facilitates knife cleaning.
