A Utility knife is an essential addition to any culinary enthusiast's collection. Its appearance resembles a chef's knife. Its length does not exceed 150 mm, and its application is highly versatile. The narrow blade profile allows for free maneuvering of the blade when cutting, peeling, or dicing small products. The Utility knife handles meat, fish, and vegetables perfectly. Often, instead of reaching for a large chef's knife, we grab a Utility type blade to quickly slice a tomato, egg, or a piece of cheese. Due to its dimensions, it wouldn't be suitable for chopping cabbage or smashing a pumpkin, but it excels with other products we typically choose when preparing, for example, a sandwich. The Kanetsugu SAIUN knife series is characterized by a restrained yet attractive aesthetic. The appearance of the Damascus blade pattern, consisting of 32 layers of steel forged onto a VG-10 alloy core, is something Japanese knife enthusiasts adore. Furthermore, the blade is hardened to 61 HRC using a special "sub-zero-treatment" process, which involves rapidly cooling the blade to -70 degrees Celsius during heat treatment. As a result, the blades of the SAIUN series have increased cutting aggression and retain their sharpness longer.

A rare blade finishing method used in the SAIUN series is Hamaguri, also known as the "clamshell edge". This is a convex blade profile that gives them a clamshell shape. This sophisticated finishing method is used, among other things, in samurai swords and is designed to strengthen kitchen blades, reduce their fragility, adapt them to Japanese cutting techniques, and minimize product sticking to the blade.

The excellent black micarta handle is adorned with two rivets and a red ring that catches the eye. Crafted in a Western style and hand-polished, it ensures a superb and ergonomic grip, allowing for excellent control of the blade during cutting. Additionally, micarta is an antibacterial material, resistant to moisture, and easy to maintain. The metal ring at the end of the handle prevents cut products from sticking and facilitates knife washing.
