Kanetsugu SAIUN Slicer 210 mm Knife
The long and thin blade is used both in Japanese cuisine for preparing sushi and sashimi, and in European cuisine for slicing and cutting meat, steaks, ham, or other meat products. The "Slicer" type knife has a sturdy and long blade, allowing for precise cuts even on large pieces of meat, while the thin tip of the knife allows reaching hard-to-access areas and perfectly slicing, for example, vegetables or fruits.
Characteristics.
The Kanetsugu SAIUN knife series is characterized by a restrained yet eye-catching style. The Damascus pattern blade, composed of 32 layers of steel forged onto a VG-10 alloy core, is what Japanese knife enthusiasts love. Furthermore, the blade is hardened to 61 HRC using a special „sub-zero-treatment" process, which involves very rapid cooling of the blade to -70 degrees Celsius during thermal processing. As a result, SAIUN series blades have greater cutting aggression and retain their sharpness longer.
A rarely encountered blade finishing method used in the SAIUN series is Hamaguri, or the so-called „shell edge". This is a convexity of the blade profile, giving it a shell shape. This complex finishing method is used, among other things, for samurai swords and is designed to strengthen kitchen knife blades, reduce their fragility, adapt them to Japanese cutting techniques, and reduce the adhesion of the material being cut to the blade.
The stunning black micarta handle is adorned with two rivets and an eye-catching red ring. Crafted in a Western style, hand-polished, it provides an excellent and ergonomic grip, ensuring superb blade control during cutting. Additionally, micarta is an antibacterial and moisture-resistant material that is easy to maintain. And the crowning metal ring prevents cut material from sticking and facilitates knife washing.
