Kanetsugu SAIUN Santoku 170 mm knife
One of the most characteristic Japanese blades. The Santoku is the equivalent of a European chef's knife, meaning it's an extremely versatile blade. It features a distinctive, low tip and a strongly curved spine. Flatter than a chef's knife blade, it facilitates the process of slicing, dicing, and chopping vegetables. However, this appearance should not be misleading. The Santoku can be used equally well for vegan and vegetarian cuisine, as well as for cutting meat, sausages, or fish.
Characteristic features.
The Kanetsugu SAIUN knife series is characterized by a restrained yet eye-catching style. The Damascus blade pattern, composed of 32 layers of steel hardened on a VG-10 alloy core, is what Japanese knife enthusiasts love. Additionally, the blade is hardened to 61 HRC using a special "sub-zero-treatment" process, which involves extremely rapid cooling of the blade to -70 degrees Celsius during thermal processing. Therefore, the SAIUN series blades exhibit greater cutting aggression and retain their sharpness longer.
A rare blade finishing method used in the SAIUN series is Hamaguri, also known as the "clamshell edge". This is a convex part of the blade profile, giving it a clamshell shape. This complex finishing process is applied, among other things, to samurai swords and is intended for kitchen blades to strengthen them, reduce their brittleness, adapt them to Japanese cutting techniques, and reduce the sticking of cut products to the blade.
The beautiful black micarta handle is adorned with two rivets and a striking red ring. Crafted in a Western style, the handle is hand-polished, ensuring excellent control when cutting with the blade. Furthermore, micarta is an antibacterial material, resistant to moisture, and easy to clean. The crowning metal ring prevents cut products from settling and facilitates knife washing.
