Kanetsugu SAIUN Chef's Knife 200 mm

A chef's knife is the most versatile blade used in both professional and home kitchens. It is characterized by incredible ergonomics and sharpness. The appropriate length and blade width are perfect for both slicing and chopping. The blade, bent into a strong arc, encourages the use of a rocking motion when cutting. This knife will be suitable for cutting meat, fish, and vegetables. It is often the first knife a chef picks up when preparing dishes.

Characteristic Features.

The Kanetsugu „SAIUN" knife series features a balanced yet eye-catching design. The Damascus blade pattern, composed of 32 layers of steel forged onto a „VG-10" alloy core, is what Japanese knife enthusiasts adore. Furthermore, the blade is hardened to 61 HRC using a special „sub-zero-treatment" process, during which the blade is cooled to -70 °C during thermal processing. As a result, „SAIUN" series blades exhibit greater cutting aggression and retain their sharpness longer.

A rare knife finishing method used for the „SAIUN" series knives is „Hamaguri", or the so-called "clam shell edge". This is a convex profile of the blade that gives it a clam shell shape. This complex finishing process, applied, among other things, to samurai swords, is designed to strengthen knife blades, reduce brittleness, adapt to Japanese cutting techniques, and minimize the sticking of cut products to the blade.

The wonderful black „micarta" handle is adorned with two rivets and a bright red ring. Crafted in a Western style, hand-polished, it offers an excellent and ergonomic grip, ensuring superb blade control during cutting. Additionally, micarta is an antibacterial material, resistant to moisture and easy to clean. The metal ring prevents the accumulation of cut products and facilitates knife washing.
