Masahiro BWH Santoku Wave Edge Knife 165 mm. One of the most interesting features of this knife is its serrated edge, which, combined with asymmetrical double-sided sharpening, keeps the blade ready for work for a very long time. The serrations on the edge apply much greater pressure to the product being cut, and the sawing motion allows for problem-free cutting. This type of solution is widely used. It is especially well-suited for products with a soft interior and a hard exterior, such as ripe tomatoes, citrus fruits, and bread. A knife with such a blade will appeal to users looking for a tool that does not require regular sharpening.

BWH is a series of knives from the MV-H line. It also uses molybdenum-vanadium, high-carbon, stainless steel MBS-26, which has been hardened in three stages until it reached a hardness of 58-59 HRC. Each blade has been perfected by masters with over 30 years of experience, making Masahiro knives incredibly, incomparably sharp.

The handle is made of a wood called Black Pakkawood, whose many layers have been pressed under high pressure and high temperature into a solid, very durable, moisture and water-resistant material. The wooden handle with an antibacterial coating is as easy to maintain as plastic and is secured with three perfectly placed and polished rivets.

Knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically 80/20. This means that the cutting edge is shifted to one of the sides on the knife's axis. The advantages of asymmetrical sharpening include a cutting edge that is up to 35% thinner compared to a symmetrical knife, making it much sharper.
