Masahiro M-600/1000 Sharpening Stone [40173]
Stones are the best way to grind, sharpen, and polish a cutting edge. This method is also used by Japanese knife factories.
The Masahiro M-600/1000 coarse/medium sharpening stone is a flat, rectangular stone with dimensions of 185x60x28mm. It features a grit (number of grains, abrasive particles per cm 2 ) of 600 on one side, used for sharpening very dull knives or knives with a damaged cutting edge, and 1000 on the other side, used to restore the sharpness of slightly dull, previously sharpened knives. The stone is placed on a rubber, non-slip base. Before use, the stone should be placed in water for a few minutes and must not be allowed to dry out during sharpening.
Masahiro recommends the following knife grit progression:
- #100 - #600 for very dull knives and those with a damaged cutting edge
- #800 - #1000 for regular sharpening of slightly dull knives
- #1500 - #3000 for final smoothing and polishing
