Bunka is a versatile knife, perfectly suited for typical kitchen tasks. It features a wide profile, a slightly rounded belly, and a flat spine. The distinctive, inverted tanto profile gives the blade a clever and subtle tip, as well as a unique and eye-catching aesthetic. This traditional Japanese knife can successfully replace a chef's or santoku knife.
Masahiro MSC knives are designed for home users. You won't find many specialized knives of various shapes here. We offer the necessary and most commonly used knives for home kitchen work: a chef's knife, a Santoku knife, and a small utility knife. The range also includes a traditional Japanese knife for cutting vegetables – nakiri.
MBS-26 steel, which was used to produce this series of knives, is a unique alloy of carbon (0.85-1.00%), chromium (13-15%), and molybdenum, manganese, and vanadium. This material possesses its unique properties due to a special heat treatment. The secret of the three-stage process, consisting of hardening, cooling at very low temperatures, and tempering to a hardness of 58-59 HRC, is known only to the company's owner – the Hattori family. The steel obtained in this way can be sharpened to an unprecedented sharpness, and maintaining the high aggressiveness of the cutting edge for a very long time is a characteristic feature of Masahiro knives, recognized by users worldwide. MBS-26 belongs to the group of so-called stainless steels, which do not react with changes in color or odor upon contact with acidic products. Keeping knives made from this alloy immaculate and shiny is not a problem. A simple wash in lukewarm water with dish soap is sufficient. Just remember to wipe the knife dry after washing.
The handle made of pakkawood has been perfectly profiled and finished, making the knife feel like a natural extension of the hand when held, thus making work easy and very pleasant.
