Description
Masahiro MV-H 149_1101_BB Knife Set
A Masahiro set in decorative packaging, consisting of MV-H Chef 210mm and Paring 90mm series knives. The Chef's knife is the most popular and frequently used knife for kitchen tasks, and its smaller version – the Paring 90 mm knife – perfectly complements it. Moreover, everything packed in a beautiful box makes for an excellent gift set.
The characteristic shape of the chef's knife, originating from French cuisine, is used for many kitchen tasks, and the name "chef's knife" emphasizes that it is an indispensable tool for every chef. The knife is very light, and the handle fits securely in both small and large hands. Due to the perfect balance of the blade and handle, it allows for a rhythmic, highly effective, rocking motion on the surface when cutting or chopping various ingredients.
Paring is a knife designed for peeling and processing small products such as fruits and vegetables. Its shape resembles a miniature chef's knife, and the sharp tip allows for easy maneuvering.
The MV-H series was developed and manufactured for European and American customers who use knives somewhat differently than in Japan. In addition to slicing, knives in the West are also used for chopping. Considering the use of this technique, the blades of the MV-H series knives are slightly thicker and more durable for heavier tasks.
Knives in this line are made from a VG-10 derivative, molybdenum-vanadium, high-carbon stainless steel, called MBS-26, which was hardened in three stages until it reached a hardness of 58-59 HRC. Each blade has been refined by masters with over 30 years of experience, making Masahiro knives incredibly sharp.
The hygienic handle with antibacterial properties is made from a material called polyacetal (POM), which is exceptionally durable. The handle is secured with three perfectly placed rivets, and an additional metal reinforcement is used between it and the blade.
The knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically.
