Masahiro MV-H 149_1104 Knife Set
Masahiro set in a decorative package, consisting of MV-H Chef 210mm and Utility 150mm series knives. The Chef's knife is the most popular and frequently used knife for kitchen work, and its smaller variant – the 150 mm Utility knife – perfectly complements it. Moreover, everything packaged in a beautiful box makes for an excellent gift set.
The characteristic shape of the chef's knife, originating from French cuisine, is used for many kitchen tasks, and the name "chef's knife" emphasizes that it is an indispensable tool for every chef. The knife is very light, and the handle fits securely in both small and large hands. Due to the perfect balance of the blade and handle, it allows for a rhythmic, highly effective, rocking motion on the surface when slicing or dicing various products.
Utility knife or all-purpose knife is a smaller version of the chef's knife. Versatile in use, suitable wherever a chef's knife is too large.
Masahiro MV-H 149_1104 Knife Set
The MV-H series was developed and produced for European and American customers who use knives somewhat differently than in Japan. In addition to slicing, knives in the West are also used for chopping. Considering the use of this technique, the blades of the MV-H series knives are slightly thicker and more durable for heavier tasks.
Knives in this line are made from a VG-10 derivative, molybdenum-vanadium, high-carbon stainless steel, called MBS-26, which has been hardened in three stages until it reaches a hardness of 58-59 HRC. Each blade has been refined by craftsmen with over 30 years of experience, making Masahiro knives incredibly sharp.
The hygienic handle with antibacterial properties is made from a material called polyacetal (POM), which is exceptionally durable. The handle is secured with three perfectly placed rivets, and an additional metal reinforcement is used between it and the blade.
Knives in this series are sharpened on two sides, but unlike most Western manufacturers, Masahiro knives are asymmetrically sharpened at an 80/20 ratio. This means that one side of the blade is sharper than the other, ensuring incredible cutting precision. Such sharpening allows for greater sharpness than symmetrical sharpening.
