Description
Masahiro MV-H 149_1123 Knife Set
The Masahiro set in decorative packaging includes knives: MV-H Chef 210mm and MV-H Santoku 175mm. The Chef's knife and Santoku are two of the most popular and frequently used tools for kitchen work, and when additionally packed in a beautiful box, they create a perfect gift set.
The characteristic shape of the chef's knife, originating from French cuisine, is used for many kitchen tasks, and the name "chef's knife" emphasizes that it is an indispensable tool for every cook. The knife is very light, and the handle fits securely in both small and large hands. Due to the perfect balance of the blade and handle, it allows for a rhythmic, very efficient, rocking motion on the surface when slicing or dicing various products.
Santoku is a traditional Japanese knife, often referred to as the equivalent of a Western chef's knife. The Japanese name for this very popular knife means "three virtues" or "three good things". This implies that this knife, resembling a combination of a chef's knife and a cleaver in appearance, is very suitable for slicing, dicing, and mincing.
Masahiro MV-H 149_1123 Knife Set
The MV-H series was designed and manufactured for European and American customers who use knives somewhat differently than in Japan. In addition to slicing, knives are also used for chopping in the West. Considering the use of this technique, the blades of the MV-H series knives are slightly thicker and more durable for heavier tasks.
Knives in this line are made from a VG-10 derivative, molybdenum-vanadium, high-carbon stainless steel called MBS-26, which has been hardened in three stages until it reaches a hardness of 58-59 HRC. Each blade has been refined by masters with over 30 years of experience, making Masahiro knives incredibly sharp.
The hygienic handle with antibacterial properties is made from a material called polyacetal (POM), which is exceptionally durable. The handle is secured with three perfectly placed rivets, and an additional metal reinforcement is used between it and the blade.
Knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically 80/20. This means that the cutting edge is shifted to one side of the knife's axis. The advantages of asymmetrical sharpening include a cutting edge that is up to 35% thinner than a symmetrical blade, making it much sharper.
Useful information:
- All Masahiro knives are extremely sharp, so we recommend using them with caution.
- Masahiro knives should not be used to cut frozen products (except for series designed for this purpose).
- Do not use knives for purposes other than food.
- Use wooden or plastic cutting boards for cutting.
- Do not wash knives in dishwashers, as they damage the cutting edge.
- Wash the knife in warm water with dish soap.
- Wipe the knife dry after washing.
