Masahiro MV-L Utility Knives 150mm [14104]
The Masahiro MV-L Utility knife with a 150 mm blade is a versatile knife, a smaller version of a chef's knife. Due to its universal use, it is suitable wherever a chef's knife is too large, making it an indispensable piece of kitchen equipment.
The MV-L is the latest group of knives produced by Masahiro, with the BWH series as its prototype. For production, molybdenum-vanadium, high-carbon stainless steel MBS-26 was used, which was hardened in three stages until it reached a hardness of 58-59 HRC. Like every knife from the Masahiro factory, it has been perfected by craftsmen with over 30 years of experience.
The handle is made of wood called Black Pakkawood, whose many layers were compressed under high pressure and high temperature into a uniform, very durable, moisture and water-resistant material. Compared to the BWH series, MV-L handles are rounder and smaller in volume, adapted for users with medium and smaller hands. The wooden handle with an antibacterial coating is as easy to clean as plastic and is secured with three perfectly placed and polished rivets.
Another difference between the MV-L and BWH series is slightly thinner blades, which will allow easier slicing of cut products. The difference in blade and handle thickness also means a weight that is even more than 20% lighter.
The knives in this series are sharpened on two sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically 80/20. This means that the cutting edge is shifted to one side of the knife's axis. The advantages of asymmetrical sharpening are a cutting edge that is up to 35% thinner than a symmetrical blade, making it much sharper.
