Masahiro MV-S Utility knives 120mm [13602]
Masahiro MV-S Utility universal knife with a 120 mm blade is a smaller version of a chef's knife. Relatively short blades can also be used for peeling. Due to its versatile use, this knife is an indispensable element of kitchen equipment.
MV-S series knives are made from molybdenum-vanadium, high-carbon stainless steel, known as MBS-26 , which has been hardened in three stages until it reaches a hardness of 58-59 HRC . Each blade has been refined by craftsmen with over 30 years of experience, making Masahiro knives incredibly sharp.
The characteristic handle, made of high-quality stainless steel, has antibacterial properties and is very easy to clean. Special perforations on the handle make it extremely safe and ensure excellent blade control. The integrated handle with the blade is a very sturdy and durable construction with a wonderful appearance.
Knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically 80/20 . This means that the cutting edge is shifted to one side of the knife's axis. The advantages of asymmetrical sharpening include a cutting edge that is up to 35% thinner than a symmetrical blade, making it much sharper.
