Masahiro MV Santoku , with a blade length of 175 mm , is a traditional Japanese knife often referred to as the equivalent of a Western chef's knife. The Japanese name for this very popular knife means "three virtues" or "three virtues". This implies that this knife, resembling a combination of a chef's knife and a cleaver in appearance, is highly suitable for cutting meat, fish, and vegetables.
MV series knives are made from molybdenum-vanadium, high-carbon stainless steel, known as MBS-26, which has been hardened in three stages until it reaches a hardness of 58-59 HRC. Each blade has been refined by masters with over 30 years of experience, making Masahiro knives incredibly sharp.
The handle, possessing antibacterial properties, is made from laminated wood, known as Black Pakkawood, whose numerous layers were pressed under high pressure and high temperature into a solid, very durable, moisture and water-resistant material. The wooden handle is secured with three perfectly placed and polished rivets, and an additional metal bolster is used between it and the blade.
Knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically 80/20. This means that the cutting edge is shifted to one side of the knife's axis. The advantages of asymmetrical sharpening include a cutting edge that is up to 35% thinner than a symmetrical blade, making it much sharper.
