Masahiro MV Utility Knives 120mm [13702]
The Masahiro MV Utility 120 mm blade is a versatile knife, a smaller version of a chef's knife. Due to its universal use, it is suitable wherever a chef's knife is too large, making it an indispensable element of kitchen equipment.
MV series knives are made from molybdenum-vanadium, high-carbon stainless steel, known as MBS-26, which has been hardened in three stages until it reaches a hardness of 58-59 HRC. Each blade has been refined by craftsmen with over 30 years of experience, giving Masahiro knives incredible sharpness.
The handle, possessing antibacterial properties, is made from laminated wood called Black Pakkawood, whose numerous layers were pressed under high pressure and high temperature into a solid, highly durable, moisture and water-resistant material. The wooden handle is secured with three perfectly placed and polished rivets, and an additional metal bolster is used between it and the blade.
Knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically at 80/20. This means that the cutting edge is shifted to one side of the blade's axis. The advantages of asymmetrical sharpening include a cutting edge that is up to 35% thinner than a symmetrical blade, making it significantly sharper.
