Masahiro MV Utility Knives 150mm [13704]
The Masahiro MV Utility knife with a 150 mm blade is a versatile knife, a smaller version of a chef's knife. Due to its universal use, it is suitable wherever a chef's knife is too large, making it an indispensable element of kitchen equipment.
MV series knives are made of molybdenum-vanadium, high-carbon stainless steel, called MBS-26, which was hardened in three stages until it reached a hardness of 58-59 HRC. Each blade has been refined by masters with over 30 years of experience, making Masahiro knives incredibly sharp.
The handle, with antibacterial properties, is made of laminated wood, called Black Pakkawood, whose many layers were pressed under high pressure and high temperature into a solid, very durable, moisture and water-resistant material. The wooden handle is secured with three perfectly placed and polished rivets, and an additional metal bolster is used between it and the blade.
Knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically 80/20. This means that the cutting edge is shifted to one side of the knife's axis. The advantages of asymmetrical sharpening include a cutting edge that is up to 35% thinner than a symmetrical blade, making it much sharper.
