Masahiro knife set with a magnetic block made of specially selected oak wood. The set includes five MV-H series knives: Chef 210mm, Santoku 175mm, Bread 240mm, Utility 120mm, and Paring 90mm. The "Chef" knife is one of the most frequently chosen kitchen knives by both professional chefs and amateurs. The characteristic knife shape, originating from French cuisine, is used for many kitchen tasks, and the name chef's knife emphasizes that it is an indispensable tool for every cook. The knife is very light, and the handle fits securely in both small and large hands. Thanks to the perfect balance of the blade and handle, it allows for a rhythmic, highly effective, rocking motion on the surface when slicing or dicing various products.
The Utility knife with a 120 mm blade is a versatile knife, which is a smaller version of the chef's knife. Due to its universal use, it is suitable wherever a chef's knife is too large, making it an indispensable element of kitchen equipment.
Santoku is a traditional Japanese knife, often referred to as the equivalent of a Western chef's knife. The Japanese name for this very popular knife means "three virtues" or "three good things." This implies that this knife, resembling a combination of a chef's knife and a cleaver in appearance, is perfectly suited for slicing, dicing, and most importantly, excellent for meat, fish, and vegetables.
The Bread knife, with its 240 mm long serrated blade, is designed for slicing bread. It easily handles tough bread crusts and soft interiors, providing aesthetic slices with minimal crumbs. Some chefs also use this knife to cut chocolate, tomatoes, or citrus fruits.

MBS-26 steel, used in the production of this series of knives, is a unique alloy of carbon (0.85-1.00%), chromium (13-15%), and molybdenum, manganese, and vanadium. This material possesses its unique properties due to a special heat treatment. The secret of the three-stage process, consisting of hardening, cooling at very low temperatures, and tempering to a hardness of 58-59HRC, is known only to the company's owner – the Hattori family. The steel obtained in this way can be sharpened to an unprecedented sharpness, and maintaining a high cutting edge aggressiveness for a very long time is a characteristic feature of Masahiro knives, recognized by users worldwide.
MBS-26 belongs to the group of so-called stainless steels, and it does not react with changes in color or odor when in contact with acidic products. Keeping knives made from this alloy pristine and shiny is not a problem. Simple washing in lukewarm water with dish soap is sufficient. Just remember to wipe the knife dry after washing.
The handle of the MV-H series knives is made of a material called polyacetal (POM). This hygienic handle with antibacterial properties is exceptionally durable and resistant to damage. The handle is secured with three perfectly placed rivets, and an additional metal reinforcement is used between it and the blade.
The knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically 80/20. This means that the cutting edge is shifted to one side of the knife's axis. The advantages of asymmetrical sharpening include a cutting edge that is up to 35% thinner than a symmetrical blade, making it much sharper.
