Masahiro set in a decorative package, consisting of knives: Sankei Chef 180 mm and Sankei Paring 90 mm. This knife set is the absolute minimum that should be in every kitchen, and additionally packaged in a beautiful box, it makes an excellent gift set.
„Chef“ is one of the most frequently chosen kitchen knives by both professional chefs and amateurs. Originating from French cuisine, the characteristic knife shape is used for many kitchen tasks, and the name chef's knife emphasizes that it is an indispensable tool for every cook. The knife is very light, and the handle fits securely in both small and large hands. Thanks to the perfect balance of the blade and handle, it allows for a rhythmic, highly effective, rocking motion on the surface when cutting or chopping various products.
The set also includes a knife from the same series - Paring 90mm. Paring, more precisely – a peeler – is a knife designed for peeling and processing small products such as fruits and vegetables. The sharp tip allows for easy maneuvering, and its small size makes it comfortable to peel in hand or cut small items on a board. Due to its versatile use, it is an indispensable element of kitchen equipment.
MBS-26 steel, which was used to produce knives of this series, is a unique alloy of carbon (0.85-1.00%), chromium (13-15%), and molybdenum, manganese, and vanadium. This material has its unique properties due to special heat treatment. The secret of the three-stage process, consisting of hardening, cooling at very low temperatures, and tempering to 58-59HRC hardness, is known only to the company owner – the Hattori family. The steel obtained in this way can be sharpened to an unprecedented sharpness, and maintaining the high aggressiveness of the cutting edge for a very long time is a characteristic feature of Masahiro knives, recognized by users worldwide. MBS-26 belongs to the group of so-called stainless steels, which do not react with changes in color or odor when in contact with acidic products. Keeping knives made of this alloy impeccable and shiny is not a problem. Simple washing in lukewarm water with dish soap is sufficient. Just remember to wipe the knife dry after washing.
