The secret of the three-stage process, consisting of hardening, cooling at very low temperatures, and tempering to a hardness of 58-59HRC, is known only to the company's owner – the Hattori family. The steel obtained in this way can be sharpened to an unprecedented sharpness, and maintaining high cutting edge aggression for a very long time is a characteristic feature of Masahiro knives, recognized by users worldwide. MBS-26 belongs to the group of so-called stainless steels, which do not react with changes in color or odor upon contact with acidic products. Keeping knives made from this alloy impeccable and shiny is not a problem. Simple washing in lukewarm water with dish soap is sufficient. Just remember to wipe the knife dry after washing.
