The Masahiro Sankei Bread knife with a 210 mm serrated blade was designed for slicing bread. It easily handles hard bread crusts and soft interiors, providing aesthetic slices with minimal crumbs. Some chefs also use this knife to cut chocolate, tomatoes, or citrus fruits.
MBS-26 steel , used in the production of this series of knives, is a unique alloy of carbon (0.85-1.00%), chromium (13-15%), and molybdenum, manganese, and vanadium. This material possesses its unique properties due to a special heat treatment. The secret of the three-stage process, consisting of hardening, cooling at very low temperatures, and tempering to 58-59 HRC , is known only to the company's owner - the Hattori family . The steel obtained in this way can be sharpened to an unprecedented sharpness, and maintaining high cutting edge aggression for a very long time is a characteristic feature of Masahiro knives , recognized by users worldwide. MBS-26 belongs to the group of so-called stainless steel, which does not react with changes in color or odor upon contact with acidic products. Keeping knives made from this alloy impeccable and shiny is not a problem. Simple washing in lukewarm water with dish soap is sufficient. Just remember to wipe the knife dry after washing.
The simple and functional shape of the pakkawood handle gives the knife a unique character. A perfectly polished handle with two rivets, imperceptible to the touch, allows for extremely comfortable work with this tool, even for extended periods.
