Description

Masahiro Sankei Bread Knife 210mm [35926]

The Masahiro Sankei Bread knife with a 210 mm serrated blade was designed for slicing bread. It easily handles hard bread crusts and soft interiors, providing aesthetic slices with minimal crumbs. Some chefs also use this knife to slice chocolate, tomatoes, or citrus fruits.

MBS-26 steel, used for knives in this series, is a unique alloy of carbon (0.85-1.00%), chromium (13-15%), molybdenum, manganese, and vanadium. This material boasts unique properties due to a special heat treatment process. The secret of the three-stage process, consisting of hardening, cooling at very low temperatures, and tempering to 58-59  HRC, is known only to the company's owner – the  Hattori family. The steel obtained this way can be sharpened to unprecedented sharpness, and maintaining a high cutting edge aggressiveness for a very long time is a characteristic feature of  Masahiro knives, recognized by users worldwide. MBS-26 belongs to the group of so-called stainless steels, which do not react with changes in color or odor when in contact with acidic products. Keeping knives made from this alloy immaculate and shiny is not a problem. A simple wash in lukewarm water with dish soap is sufficient. Just remember to wipe the knife dry after washing.

The simple and functional shape of the pakkawood handle gives the knife a unique character. The perfectly polished handle with two imperceptible rivets allows for extremely comfortable work with this tool, even for extended periods.

The "Sankei"  series is primarily designed for amateur chefs, but it can easily handle the demanding conditions of a restaurant kitchen. The group includes six main knives: a chef's knife, santoku, paring knife (peeler), a smaller utility knife (15 cm blade length), and a bread knife for slicing. Compact sizes, excellent balance, and low weight are characteristic features of this series. At the same time, like all  Masahiro products,  Sankei knives were manufactured with due diligence and passion to perfectly finish even the smallest details.
