Description

Masahiro Sankei Paring knife 90mm [35844]

Masahiro Sankei Paring 90 mm is a knife designed for peeling and processing small products such as fruits and vegetables. Its sharp tip allows for easy maneuvering, and its small size makes it comfortable to peel in hand or cut small items on a board. Due to its versatile use, it is an indispensable element of kitchen equipment.

MBS-26 steel , which was used to produce knives in this series, is a unique alloy of carbon (0.85-1.00%), chromium (13-15%), and molybdenum, manganese, and vanadium. This material possesses its unique properties due to a special heat treatment. The secret of the three-stage process, consisting of hardening, cooling at very low temperatures, and tempering to 58-59  HRC , is known only to the company owner -  Hattori family . The steel obtained in this way can be sharpened to unprecedented sharpness, and maintaining a high cutting edge aggressiveness for a very long time is a characteristic feature of  Masahiro knives , recognized by users worldwide. MBS-26 belongs to the group of so-called stainless steels, and does not react with changes in color or odor upon contact with acidic products. Keeping knives made from this alloy pristine and shiny is not a problem. Simple washing in lukewarm water with dish soap is sufficient. Just remember to wipe the knife dry after washing.

The simple and functional pakkawood handle shape   gives the knife a unique character. The perfectly polished handle with two imperceptible rivets allows for extremely comfortable work with this tool, even for extended periods.

The „Sankei“ series   is primarily intended for amateur chefs, but it can easily handle the demanding conditions of a restaurant kitchen. The group includes six main knives, such as: a chef's knife, santoku, paring knife (skustasis), a smaller utility knife (15 cm blade length), and a bread knife for slicing and cutting. Compact sizes, very good balance, and low weight are characteristic features of this series. For safety reasons, all models (except the bread knife) have a ground angle (the "beard" of the knife – the cutting edge), which protects against accidental cuts. Like all  Masahiro products ,  Sankei  knives were produced with due care and passion to perfectly finish even the smallest details.
