Masahiro SANKEI Utility with 150 mm blade is a versatile knife, which is a smaller version of a chef's knife. Due to its versatile use, it is suitable wherever a chef's knife is too large, making it an indispensable element of kitchen equipment.
MBS-26 steel, which was used to produce knives of this series, is a unique alloy of carbon (0.85-1.00%), chromium (13-15%), and molybdenum, manganese, and vanadium. This material has its unique properties due to special heat treatment. The secret of the three-stage process, consisting of hardening, cooling at very low temperatures, and tempering to 58-59 HRC, is known only to the company owner - the Hattori family. The steel obtained in this way can be sharpened to an unprecedented sharpness, and maintaining the high aggressiveness of the cutting edge for a very long time is a characteristic feature of Masahiro knives, recognized by users worldwide. MBS-26 belongs to the group of so-called stainless steel, which does not react with changes in color or odor upon contact with acidic products. Keeping knives made from this alloy impeccable and shiny is not a problem. A simple wash in lukewarm water with dish soap is sufficient. Just remember to wipe the knife dry after washing.
The simple and functional shape of the pakkawood handle gives the knife a unique character. The perfectly polished handle with two imperceptible rivets allows for extremely comfortable work with this tool, even for extended periods.
The „Sankei“ series is mainly intended for amateur cooks, but it can easily handle demanding restaurant kitchen conditions. The group consists of six main knives, such as: a chef's knife, santoku, paring knife (peeler), a smaller utility knife (15 cm long blade), and a bread knife for slicing and cutting. Compact sizes, very good balance, and low weight are characteristic features of this series. For safety reasons, all models (except the bread knife) have a ground angle (knife beard – cutting edge) that protects against accidental cuts. Like all Masahiro products, Sankei knives were manufactured with due diligence and passion to perfectly complete even the smallest details.
