Suncraft MU BAMBOO 167mm MU-0

The Usuba is a knife similar to a cleaver, but it is smaller and lighter. It is useful for working with vegetables. Characteristically, the single-bevel cutting edge of this knife is straight or forms a gentle arc. The high blade effectively separates the chef's hand from the cutting board surface, ensuring comfortable work. The large blade surface greatly assists in transferring chopped products from the cutting board. In Japanese cuisine, Usuba is also used for katsuramuki, i.e., slicing thin sheets of vegetables such as daikon (Japanese radish), carrots, and cucumbers. Attention! Usuba is not used  for chopping bones.

The MU Bamboo knife collection was created by the Italian design duo: Nunzia Paola Carallo and Jacopo Romano Grandis, operating in the design world under the brand Carallo-Grandis. These knives are highly recommended by Pietro Leemann, chef and owner of the excellent Milanese restaurant Joia.

For the production of MU BAMBOO knives, the highest quality Japanese so-called molybdenum-vanadium stainless steel is used, hardened to 58 HRC. Their handles are made from Japanese bamboo, carbonized for strength. The use of this material for the handle is a kind of tribute that the designers pay to Japanese nature – after all, bamboo is common in the Land of the Rising Sun.

The MU BAMBOO series was inspired by modern fusion cuisine, which is why Carallo-Grandis included both knives typical for European cuisine and classic Japanese knives such as Santoku, Deba, Usuba, and Sashimi. The entire collection is a perfect combination of Italian design and Japanese quality.
