A Sashimi knife, also known as Yanagiba, features a thin, quite long, and exceptionally sharp blade. It is used for preparing sushi and sashimi, slicing thin pieces, and filleting certain types of fish. The single-sided sharpening allows for precise cutting of aesthetic slices that easily separate from the knife. The Sashimi knife requires the chef to use specific cutting techniques – it must be cut in only one direction, towards oneself. As a result, no zigzag marks are left on the surface of the cut product, and the cross-section of the slice is perfect, uncrushed, and untorn.
