Suncraft SENZO PROFESSIONAL Santoku Kitchen Knife 165 mm MP-03
Santoku is the Japanese counterpart to the Western chef's knife. Its name translates to "three virtues" or "three good things." Not without reason – this knife, resembling a cross between a regular chef's knife and a cleaver, is multi-functional. It is perfect for slicing meat, fish, and vegetables.
The SENZO PROFESSIONAL line is a combination of premium Japanese steel with a traditional European handle. For everyone who expects perfect sharpness, Japanese blade design, and a subdued wooden handle design. In this case, there are no eye-catching fireworks, as we are accustomed to from "Suncraft" forging masters. However, we have sophisticated design and one of the best steels, namely powder steel *Super Gold 2.
SENZO PROFESSIONAL knife blades are forged from 3-layer steel with an SG2 steel core. This construction creates a characteristic line on the blade, called Katana-Edge. This embellishment originates from traditional Japanese sword making. Over time, the blade line may darken slightly, which will further highlight the character of the Far Eastern knife.
The knife handle is made of black-stained Pakkawood. This is resin-impregnated wood that provides excellent protection against moisture. The knife handle is attached to the tang with three rivets, the middle of which is a decorative rivet called a mosaic pin. At the bottom of the handle, there is a steel ring that additionally protects the wood from dirt and facilitates knife cleaning and maintenance. The specially profiled handle shape is very ergonomic and fits perfectly in the hand.
* SG2 ( Super Gold #2 ) powder steel, characterized by high corrosion resistance and commonly known as stainless steel, is one of the best materials for knife production. It is created through a complex process where extremely fine steel nanoparticles are combined, heated, and formed into the desired shape. This manufacturing method is completely different from "traditional" smelting and allows for much better performance parameters, and in the case of blades, greater than average resistance to dulling.
