Suncraft SENZO UNIVERSAL Kitchen Knife 240mm FT-05

A slicing knife is the larger sibling of a portioning knife. It is used for both portioning and slicing. When working with it, the pull-slice technique (towards oneself) should be used, which provides the most aesthetic effect.

The SENZO Universal knife line was created with the needs in mind that professional chefs, especially in Europe, communicated to SUNCRAFT. They are accustomed to certain characteristics of knives used until now. Chefs from many restaurants in the Old Continent contributed to the creation of a special SENZO product series – with full tang blades, fitted into the handle with rivets. Thanks to this construction, the knife is very well balanced and holds firmly in the hand, and most importantly, it is extremely durable. Suncraft SENZO UNIVERSAL uses the best patterns from the Western world, and additionally, due to the use of 33-layer steel, the so-called Damascus*, with a VG-10 steel** core, the knives in this series are exceptionally durable, and their blades are resistant to wear. The "wavy" effect visible in the close-up of the blade is associated with samurai swords. The forged pattern not only looks attractive but also prevents cut products from sticking to the blade. Like other SUNCRAFT SENZO knives, the handles of the UNIVERSAL line are made of brown Pakkawood***, which is extremely resistant to kitchen conditions.

* Damascus steel – modern so-called Damascus steel consists of super-thin stainless steel sheets layered on top of each other, where the middle 25% of the sheets are called the core, and the remaining 75% consist of sheets of different hardness – alternating layers of soft and hard steel. This creates a "wavy" effect on the knife's surface.

**VG-10 steel, this type of steel was considered the best for kitchen knife production. Chefs appreciate both the beautiful design of VG-10 knives and their exceptional durability. VG-10 is a high-hardness material, with a value of HRC 60 on the HRC scale. For this reason, knives made from it are extremely sharp and very resistant to abrasion.

***Pakkawood – this is laminated birch or maple wood, impregnated with resin. It is highly resistant to heat and moisture and was developed specifically for knife handles.
